Amber, Chelsea and my backyard

My heart is heavy.
 
It appears that Amber Dubois, the Escondido High School student who went missing on Valentine’s day a year ago was murdered. All theories are pointing to John Gardner, a registered sex offender currently under indictment for the rape and murder of Chelsea King.

Both these stories weigh heavily on me because they occurred “in my backyard.” One of my first jobs out of high school was coaching the girls soccer team for Escondido High School. When Amber first went missing, I was more than willing to help in the search. I remember thinking she could very well have been one of the girls I used to coach. If you’ve ever played team sports you know how members of your team become like family members, especially in high school. Some very personal bonds are made. Her mysterious disappearance brought quite a bit of fear to my community.

When Chelsea King went missing and whose body was later found in Lake Hodges where she was abducted, my thoughts immediately went to Amber. “Not again” I thought, “Not in my backyard.” I jogged that same trail on the lake on occasion. To find out Amber’s remains were found in a park in Pala, CA minutes from where I work made the thought that much more prominent.

To think, I had been out helping search for clues around Escondido High School’s surrounding area for months only to learn today I’d been driving by Amber’s body on my way to work everyday for the past year is incredibly frustrating and heartbreaking.

After learning that John Gardner, a registered sex offender’s DNA was found on Chelsea’s clothing, my blood began to boil. To find out he spent five years in prison for a previous assault just brought full on rage. How could this have happened? When something this terrible happens, many times are first reactions are to lock up our kids, set curfews, castrate them, etc. I refuse to live in fear. I refuse to let these criminal monsters make me afraid to go out at night or let our children play outdoors. They should fear us. Not the other way around.

Apparently, Gardner only did 5 years for his previous crime because the victim didn’t want to testify. After his release from prison, he was forced to wear a GPS bracelet for 3 years . And here lies the rub…the most heartbreaking thing of this horrifying story is that no one (other than the assailant), did anything wrong. Amber was walking to school. Chelsea was jogging at 2:00 in the afternoon. The prosecutor and judge in Gardner’s previous conviction did everything they could and were supposed to do. The laws that govern sex offenders simply aren’t protecting the public. If we accept for the moment that sex offenders can be rehabilitated and should at some point be released from prison after paying their debt to society, who is to say we can’t have them permanently “tagged” to unsure this is the case? If Gardner had still been wearing the GPS anklet, a parole officer would have been notified the second he was within 100 yards of the high school Amber was kidnapped from. He would have been notified when Gardner was staying at his mother’s house and not in Lake Elsinore where his registered address was. Curfews, lockups, etc punish the kids. They’re doing nothing wrong. Castration doesn’t work. Any psychologist will tell you that sexual offenders aren’t in it for the sex. It’s usually about power. They will still rape and murder. They will just use other tools to do the job; but take away their privacy? That may not cure them, but it will protect the public. Isn’t that what laws are supposed to be in place to do?

So many of us have let our anger and quest for punishment cloud our judgment. Violence begets violence. I don’t want to defend this monster anyway. He is sick and has now proved that he is incurable. I am not a believer in the death penalty when it’s used for vengeance. Ask anyone who has witnessed one. It didn’t bring closure and it doesn’t make you feel better. Gardner shouldn’t “pay” with his life. He should be put down like the animal he is so he can’t so something like this again; to protect those of us who live in a civil society. Once convicted, he should die, but for the right reason.

My thoughts and prayers are with the families and friends of Amber and Chelsea. They have been brought together under the most horrific of circumstances and both have pledged to begin crusading for the creation of tougher child protection laws and awareness. I am both privileged and determined to join this crusade. I will not let Chelsea and Amber die in vain.

Not in my backyard. Never again.

The Olympics, NBC, and Social Media...

Hurm…

 

I’ll let you all in on a little secret.  I’m opinionated. Ok, that’s probably not much of a secret. If you’re arrogant enough to publicly display your views on the just about everything in the world at a large than you’re probably not only opinionated, you’re arrogant for thinking anyone would care. Well, you’re right –on both accounts.  ‘cept I really don’t care that you don’t care.  I’m going to give you my opinion anyway and you may do with it what you wish. Like I said, I don't care... (that much)

 

Here’s the REAL secret. While in college, before becoming a chef, I actually considered getting into communications to become a sports talk host.  Could you imagine it?  I’d get paid (if popular enough, in the high 6 figures) to publicly vent my opinions on athletes who make more money in a year than I will probably see in my entire life. Now that’s a dream job if I’ve ever heard one. Tony Romo would be my bitch.

 

Spending the better part of my life in a hot airless kitchen hasn’t kept me from being an avid sports fan. Notably the sports most of the United States doesn’t like to watch. IE: Soccer, Golf (before Tiger), NASCAR, Hockey, Tennis, etc…

 

This being an Olympic year, it’s quite exciting for me. As far as hockey goes, the only thing more exciting than NHL playoff hockey is Olympic hockey.  Players don’t want to spend a lot of time in the penalty box.  There is a lot at stake. It’s more about the game than looking tough. While still physical, it’s not as violent. Those guys leave it all out on the ice. I love it.

 

However, I’m disappointed in the fact that so much of the Olympics are tape delayed.  I live in San Diego, Ca; the EXACT same time zone as the games in Vancouver. Is there any reason why the games can’t be shown in real time? The games have changed dramatically, since the days of my childhood.  Back then there was no snowboarding, short track speed skating and curling was something you did with ribbon when trying to do a fancy wrap job on your girlfriend’s birthday present. There most certainly weren’t any “Flying Tomatoes,” or Apolo Ohno’s to root for –and thanks to the Jamaicans, even bobsledding is cool.

 

So I understand that in the past there probably wasn’t as much interest in the games but today, that’s a different story. Shaun White’s performance on the snowboard ramp was EPIC –worthy of Tony Hawk status, even. I’m not kidding you; my jaw was on the ground watching his three runs. Apolo Ohno is the new Bonnie Blair (figuritively speaking), and NHL professionals are playing hockey.

 

The problem? 

 

With the advent of social media how do you hide from the results? I know what Britney Spears is having for breakfast before she orders it. In fact, I’m pretty sure my grandmother has a Facebook account.  I’m confident of this as she has quite the green thumb and loves to farm; I just haven’t found her profile yet. Had I and befriended her, I would have seen that she too had posted the results of the competition. I already knew the “Flying Tomato” (who looked more like he was going to rob a Circle K than compete in the Olympics) had locked up the gold medal!! While the performance was incredible, where’s the drama?

 

Then come last Sunday, the biggest hockey game of the competition thus far, Canada vs. USA is being shown on MSNBC! MSNBC? Seriously? What the hell? The “other” game, Russia vs. Czech Republic was being shown in HD on their “main” channel. Ridiculous! How can the USA game be aired as the #2 game?! What country am I in? It boggles the mind. NBC, most would agree what you did to Conan O’Brien and Jay Leno was pretty crappy but to put the USA on the back burner? Well, not only is that unpatriotic, it’s pretty damn offensive! Oh, here’s the kicker…THE AMERICANS WON THE GAME!!! Against Canada!!!  Even if think Sydney Crosby fathered Melissa Etheridge’s child, you gotta know that’s HUGE!

 

Well, I’m glad Jim Kramer was willing to give up his precious time slot or I might have had to watch the game on Hulu or YouTube. Not that it mattered, Chloe Kardashian would have tweeted the result anyway. I here Lamar Odom is big hockey fan.

Single Awareness Day and Food Porn

With Valentine’s Day (or single awareness day as I like to call it), just around the corner, it has become time to start conceptualizing some special menu items for the restaurant. Since in my opinion I feel dinner is the way most couples who decide to go out are likely to celebrate this special day, I don’t take it lightly. In the past my focus has been to treat the meal as foreplay since I’m sure in most cases the meal won’t be the “climax” of the evening but just the begining (if you catch my drift).

I chose the title “Foodies Block” for my blog based on the term “writer’s block.” I would use the term to describe the state of blankness my head would go into when trying to create special dishes for each evening or (which was most often the case), holidays. When faced with "foodie’s block," I usually would go for a walk, drive or chat with friends in hopes of clearing my head in order to allow inspiration to enter. It was in these short little wanderings that I found the locations and eateries I write about. In the past year or so those wanderings meant never leaving the kitchen and included social media. Sites like Facebook, Twitter and Foursquare have been instrumental in taking me to that special clear headed state.

My methods are unorthodox but hey, they work. In another unusual moment of spontaneity, I decided to ask my fellow twitter buddy Aurora Snow to help me choose 5 foods considered to be aphrodisiacs. I would then use these culinary “love potions” as a basis for specials to be served on Valentine’s day. If you don’t know who she is….well, when I first met her, I didn’t either. Something I hoped she was not offended by as now I have come to learn how popular she really is. She's an adult actress.
Before you start questioning my judgment here; I ask you, "can you think of a more qualified “sexpert” than someone who works in the San Fernando Valley?" Yeah, me either. Don't judge.
When asked I half expected her to take a day or two in deciding her choices for me to work with but to my surprise, she rattled them off within 10 minutes. It’s obvious she really knows her stuff. The following are the choices Miss Snow selected for me as well as the dishes created. While it’s possible (actually likely) that these dishes will still get modified somewhat before service, I’m very happy in the initial conceptualization.
 

 

Aphrodisiac: Basil

For centuries, Basil is said to have stimulated the sex drive and boosted fertility as well as producing a general sense of well being for the body and mind. The scent of basil was said to drive men wild -- so much so that women would dust their breasts with dried and powdered basil. Basil is one of the many reported aphrodisiacs that may have the property of promoting circulation and used in love spells. In Italy, where sweet basil is called "kiss me Nicholas," "bacia-nicola," it is thought to attract husbands to wives, and a pot of basil on a windowsill is meant to signal a lover. In Moldavian folklore, if a man accepts a sprig of basil from a woman, he will fall in love with her. In modern aromatherapy, basil is used to cheer the heart and mind. The sweet, energizing aroma seems to aid in curing depression.

Dish: Curried Basil Roasted Chicken Breast over Coconut Rice and Portobello Mushroom

Mixing fresh basil with traditional indian curry spices and olive oil, the mixture is then spread over a free range chicken breast. Roasting the basil releases it's oils into the breast along with the curry. It is served over a grilled portobello mushroom stuffed with a fragent basmati rice cooked in coconut milk. A fresh basil chiffonade is added at the end.

Aphrodisiac: Pine nuts

As far back as medieval times, pine nuts have been used to stimulate the libido because they are rich in zinc, a key mineral for maintaining male potency. "Pine nuts first got their aphrodisiac reputation from the effort required to get them. They're nestled in the cones of the pine tree, and the best were said to come from the Himalayas," says Martha Hopkins, author of InterCourses: An Aphrodisiac Cookbook. Like most nuts, they also offer protective cardiovascular benefits and are especially good sources of thiamin, iron, magnesium, and manganese.

Dish: Pine Nut crusted Chillean Sea Bass w/ glazed Carrots and Clarified Chive Butter

Textures, Textures, Textures. Crunchy pine nuts, flaky fish flesh, al dente carrots and creamy butter. The sea basshere is  topped with the light crunch of pine nuts. Roasting releases the oils in the pine nuts and gives them an amber color creating a great contrast to the sweet carrots underneath. The carrots are cooked in a shallow mixture of water, sugar and nutmeg coating them in a sweet, yet savory syrup. The chive butter is lightened slightly by clarifying and garnishes the plate. 

Aphrodisiac: Arugula

Arugula or rocket was a popular aphrodisiac among the ancient Romans and ancient Egyptians. It was quite often associated with Priapus, a minor Roman god of fertility.  Arugula is said to help clear the mind and although neither of these curative properties specifically raises sexual energy, they are both attributes that promote the right mood for romance. It should be added that this peppery spring and autumn lettuce is rich in vitamins A and C and many minerals that are essential for putting the body in its sexual prime.

Dish: Arugula and Macadamia Nut Pesto Veal Chop w/ roasted Yukon Potatoes

Given the ingredients of basil and pine nuts to use here, the obvious thing to do would be to make a pesto but that would be to easy. Who says pestos have to be made with basil and pine nuts?  Using arugula here gives the sauce a very peppery bite which is cut through with the oily and sweet macadamias. Parmasean cheese adds a saltiness that truly brings out the flavor of the veal. The Yukon potatoes are crispy and fluffy giving a great contrast.

Aphrodisiac: Oyster

Although the aphrodisiastic qualities of oysters are considered to be mostly phallic, the Romans placed the oyster high on their list of prized aphrodisiacs. Casanova, the legend goes, would eat 50 raw oysters for breakfast. Yet interestingly, oysters (like pine nuts) are high in zinc, which is necessary for sperm production. Raw oysters are also high in D-aspartic acid and N-methyl-D-aspartate, which increased testosterone levels in a study on male rats, which could in theory increase libido.

 Dish: Raw Kumumoto Oyster w/ Cucumber Champagne Migonette

While migonettes are classic with oysters, this one is lighter. Rice wine vinegar is used. Mixed with champagne and added to a small dice of shallots and cucumber, it gives an unexpected and juicy crunch to the oyster.

Aphrodisiac: Dark Chocolate

Chocolate has phenylethylamine and serotonin; two chemicals that light up pleasure areas in the brain. Chocolate is similar to sex in that it makes you feel good. This doesn't imply, and no studies have shown that chocolate increases sexual desire.

Dish: Dark Chocolate Cake topped with Chocolate Ganache; Bittersweet Chocolate Wrapper

Moist CHOCOLATE cake is topped with a whipped airy CHOCOLATE ganache and wrapped with a bittersweet CHOCOLATE sheet. See a pattern here???
